Mama’s Kitchen
In my younger years I remember stopping by Papa’s house for lunch. One of my favorite foods from his kitchen was a vegetable dish called Kishka (pronounced like “shika”). This is a Ukrainian dish which can be made with either chicken or beef. The meat was cut up and pan fried with onions and potatoes. The dish was topped with a poppy seed and raisin sauce, which was awesome! We would eat this when the summer air would begin to cool.
As a child I would love to go to my Papa’s house and experience this wonderful meal again. As an adult, I have realized how special it is to have food created for you, and that being the way my Papa was. I have been very lucky to have that as a parent, and I am so thankful for my family, and especially my parents.
If you can’t make it to your parent’s house for lunch, I think this would be a wonderful dish to take to them! My parents would love it!
Ingredients:
1 pound ground beef or 1 chicken breast, very finely chopped
1 large white onion, chopped
3-4 large potatoes, peeled and thinly sliced
1 egg
1/4 cup flour
3 tablespoons finely chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1 cup crumbled feta cheese
Directions:
1. Heat a large skillet over medium-high heat. Add the ground beef and onions and cook until cooked through. Using a slotted spoon, transfer the beef mixture to a bowl, then return the skillet to the heat.
2. Reduce the heat to medium-low, and add the potatoes and egg. Cook until the egg is cooked through.
3. Sprinkle the flour over the top of the potatoes, then stir in the parsley, salt, pepper, and nutmeg. Add the meat, and stir until combined.
